SAVING THE PLANET...ONE BITE AT A TIME

Every year we celebrate Earth Day in April. But we know our environment is in dire peril and so we, at Credible Edibles, feel that one day is not enough. We think every day should be Earth Day. According to a recent report issued by the United Nations' Food and Agriculture Organisation (FAO) Western, meat-centered diets are a major cause of global warming. They estimate that livestock contribute 18% of greenhouse gases, this is more than the transportation industry! Check out this website for a summary of some of their findings. Closer to home you can check out the David Suzuki Foundation's website for their 10 Ways to Stop Global Warming. Eating wisely by choosing foods that are low in the food chain, such as fruits, vegetables, grains and nuts, is an important change we can make every single day. And just this month Canada's top eleven environmental organisations issued a report calling on Canada and Canadians to make a real effort to reduce our environmental footprint before ecological disaster hits. In their new website TomorrowTodayCanada they provide clear and easy steps we all need to take, as governments and invididuals, right now, to stop the environmental destruction. An easy and yet hugely impactful change we can all make is to Eat Green. Check out their advice, which includes consuming " low-meat diets".

We are living in an age where being “green” is increasingly important. Typically the green movement has referred to any practices, policies or programs designed to protect or to reduce negative impact on the natural environment. Food has been a sorely neglected aspect of the green revolution. Not only does our food come from the natural environment but the production of our food has a tremendous impact on the ecosystems where it is grown, processed, packaged and transported. Food is also fundamental to our own personal health and well-being. Never has it been more important to recognize the connection between what goes on our plates and the state of our planet. G.R.E.E.N. food is our response to the emerging realisation of a connection between plate and planet.

We’ve all heard the adage “we are what we eat”. Science has finally caught up to what ancient civilisations knew and we now hear regular confirmation that what we choose to eat and drink really does determine our health, mental and physical. A very clear example of this is the stunning fact that up to 40% of cancers are due to dietary factors including food, drink and body weight (AICR, 2006). Scientists now tell us that we can prevent about one-third of all cancer deaths simply by changing the way we eat. Furthermore, there is evidence that diet has an impact on how well our brain functions, our moods, even depression.

Not only does food have an impact on our personal health and well-being, it also has an effect on the environment, locally and globally. From pesticide run-off into local waterways to rainforest decimation due cattle grazing, from transportation related pollution in our cities to methane released into the atmosphere by sheep, cows, pigs and goats. The staggering fact is that there are 1.5 billion cattle on the earth and when added to goats, pigs, sheep and chickens they collectively produce 18% of all greenhouses. This is more than all forms of transportation combined including airplanes and cars. (FAO, 2006)

The food we eat is also intimately connected with our families, friends, neighbours and colleagues. We gather around food to celebrate, to commiserate, to commemorate and to contemplate. No gathering of family and friends is complete without generous supplies of food and drink. We transmit our culture through our food, we pass on generational recipes and secrets, we show love and nurture to our children, we worship and give thanks with food. Since the earliest times food has been connected to faith and religion, from offerings to the gods to strictures against certain foods, from first communion to last supper, food and drink have accompanied the rituals and requirements of our religious lives.

Yet, despite all of this, food has become fast, pre-packaged, over-processed, eaten on the run, eaten in front of the TV. Fewer of us gather with others to break bread together and more and more of us grab something quick while rushing to yet another activity.
